Kale Salad with Lemon Tahini Dressing

A kale salad may not sound that exciting to some, but this is one that exceeds any expectations. I genuinely crave this salad because it is that good. It’s so filling and full of flavor, you won’t feel like you’re eating something that’s also good for you. Anything can be added to the salad, you can add all the veggies, nuts and protein you would like. The recipe below is a baseline starting point. It can be tailored to your tastes and needs.

This is a recipe that my sister and I would have nearly every day for lunch and has become sort of famous in our household. Anyone that tries this salad ends up loving it and I’m confident that you will too!

Kale Salad with Lemon Tahini Dressing



4 Cups Kale

1 Cup Quinoa 

1 Carrot 

1 Tsp Sesame Seeds

1 Tsp Olive Oil


3 Tbsp Tahini

3 Tbsp Lemon Juice

3 Tbsp Olive Oil

3 Tbsp Water

2 Tsp Soy Sauce

¼ Tsp Salt & Pepper


Wash the kale with warm water in a large bowl and drain. Once the kale has been patted dry of excess water added the olive oil and massage the kale until tender. 

Once you have massaged the kale add the quinoa and shave the whole carrot in. 

Then add all the dressing ingredients into a container with a lid. Shake vigorously for 30 seconds. The dressing should appear thick and creamy. Add to the bowl with the kale and toss until the dressing coats all of the salad. This serves 4 people with 1 cup portions or two people with larger portions.
