  • 2 lb Chuck Roast
  • 2 Tbsp Olive Oil
  • 3 Garlic Cloves
  • 1 Large Onion
  • 2 1/2 Cups Beef Stock
  • 1 Tsp Salt
  • 1/2 Tsp Pepper
  • 1 Tsp Chipotle Powder
  • 1/2 Tsp Cumin
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1/2 Tsp Cayenne
  • 1 Tsp Smoked Paprika
  • 2 Tbsp Tomato Paste


  • Start by pre-heating the oven to 400°
  • Next, season the chuck roast with salt and pepper on all sides. In a large dutch oven over medium-high heat add the olive oil. Once the oil is hot add the chuck roast and sear on each side until a golden crust forms.
  • Then, shut off the heat and add all of the remaining ingredients to the dutch oven. Cover the dutch oven and place in the oven for 2 hours.
  • After, the 2 hours take out the dutch oven and shred the meat with two forks and its done!
