Almond Butter Swirl Brownies
These brownies are melt in your mouth delicious, super fudgy and decadent. They are made with sweet potato and almond butter as the main ingredients giving them so much moisture and richness. They are dairy-free, gluten-free and refined sugar-free making them the perfect guilt free sweet treat!
- 1 Cup Cooked Sweet Potato
- 1/2 Cup Almond Butter
- 1 Egg
- 1/3 Cup Maple Syrup
- 1/4 Cup Coconut Oil
- 1 Tbsp Brewed Coffee (optional)
- 1 Tsp Vanilla
- 1/2 Cup Almond Flour
- 1/4 Cup Cocoa Powder
- 1/4 Tsp Baking Soda
- Pinch of Salt
- 1/4 Cup Chocolate Chips
Preheat oven to 350°
In a large mixing bowl add the cooked sweet potato, almond butter, egg, maple syrup, coconut oil, vanilla and coffee. Mix all of the ingredients together until thoroughly combined.
Next, add the almond flour, cocoa powder, baking soda and salt to the wet mixture. Mix everything together, then fold in the chocolate chips.
Line an 8x8 baking pan with parchment and pour in the brownie mixture.
Dollop on the almond butter in each corner of the pan. Use a butter knife to create swirls with the almond butter.
Bake in the oven for 25 to 30 minutes. Let cool completely before cutting into 9 squares. Enjoy!
