I am a self-professed salad junkie. 9 times out of 10 if I am going out to eat at a restaurant I am ordering a salad. Generally they get a bad rap for being boring and basic but that is not always the case.
This salad is full of flavor and textures while also being nourishing and satisfying. It is perfect on its own or paired with your favorite protein. I’m confident it’s sure to become one of your new favorite salad recipes!

Quinoa Salad with Asparagus and Goat Cheese
This salad is filling and nourishing with tangy goat cheese, spinach, asparagus, quinoa, toasted almonds, and a creamy honey mustard dressing. It is super easy to prepare and makes the perfect lunch or side dish recipe.
Ingredients

- 2 Cups Cooked Quinoa
- 2 Cups Baby Spinach
- 1 Cup Asparagus chopped
- 2 oz. Goat Cheese
- 1/4 Cup Slivered Almonds
Creamy Honey Mustard Dressing
- 1/4 Cup Plain Greek Yogurt
- 4 Tbsp Olive Oil
- 3 Tbsp Honey
- 3 Tbsp Dijon Mustard
- 2 Tbsp Water
- 1/2 Tbsp Apple Cider Vinegar
- 1/2 Tsp Salt
- 1/4 Tsp Garlic Powder
- Pinch of Pepper
Instructions
- Start by boiling a medium size pot of water. Once boiling, add a cup of diced asparagus. While it boils for 2 minutes prepare a medium size bowl with water and ice. After 2 minutes, transfer the asparagus from the boiling water to the ice bath then drain the water and set the bleached asparagus aside.
- Next, prepare the honey mustard dressing but adding the greek yogurt, olive oil, honey, dijon mustard, apple cider vinegar, water, salt, garlic powder, and pepper to a small mixing bowl. Whisk all of the ingredients together until it creates a creamy dressing.
- In a small frying pan over low heat add the sliver almonds and toast until golden brown. Finally assemble the salad by adding the cooked quinoa, asparagus, spinach, crumbled goat cheese, toasted almonds, and honey mustard dressing to a medium size mixing bowl and toss. Enjoy!
