There’s something about a dessert bar that just gets me every time. It’s one of those desserts that are easy to make and versatile enough to never have to have the same one twice. I believe that the key to making a successful baked good is nailing down a baseline recipe and tweaking it each time you make it. For example, find a way to make a bar with different layers and switch up the flavors each time you make them. This provides you with no shortage of dessert ideas.
These blackberry crumble bars start with my simple shortbread crust, then adds a jammy, sweet blackberry filling, finally it is topped off with a delicious, crumbly topping. Once you have each of the layers made its easy to put them together to create a harmonious treat!

Blackberry Crumble Bars
Ingredients
Crust
- 2 Cups Almond Flour
- 1/4 Cup Coconut Oil
- 3 1/2 Tbsp Sugar
- 1 Tsp Vanilla
- 1/4 Tsp Salt
Blackberry Filling
- 2 Cups Blackberries
- 1/2 Lemon, juiced
- 4 Tbsp Sugar
- 1 1/2 Tbsp Corn Starch
Crumble Topping
- 3 Tbsp Butter
- 1 Cup Oats
- 1/3 Cup Brown Sugar
- 1 Tsp Vanilla
- 1/4 Tsp Salt
Instructions
- Preheat oven to 350°
- In a medium size mixing bowl add the almond flour, melted coconut oil, sugar, vanilla, and salt. Mix until fully combined and is a sandy texture. Press the mixture into the bottom of an 8×8 square baking pan lined with parchment paper. Once the crust is even, place in the oven for 10 minutes and cook until golden brown.
- While the crust is baking add blackberries, lemon juice, sugar, and corn starch to a large mixing bowl. Slightly mash down the blackberry mixture still leaving some chunks of blackberries. Next pour the blackberry filling on top of the crust. Then in a small mixing bowl add the softened butter, oats, brown sugar, vanilla, and salt. Mix the topping together until there are pea sized crumbs. Sprinkle the topping on top of the blackberry filling.
- Finally, place the pan back into the oven for 25 minutes until the top is golden brown and the filling is bubbling slightly. Then take them out of the oven and let cool completely before cutting. Enjoy!
