Greek Lamb Chops with Couscous Salad

These juicy, succulent lamb chops are bursting with delicious Greek flavors and make for the perfect dinner idea! I chose to serve my lamb chops with a roasted vegetable couscous studded with salty,crumbled feta and a simple red wine vinegar dressing. This meal is super easy to make and definitely worth a try!

Greek Lamb Chops with Couscous Salad

Ingredients
  

Greek Lamb Chops

  • 4 Lamb Loin Chops
  • 1 Lemon juiced
  • 1/4 Cup Olive Oil
  • 3 Cloves Garlic minced
  • 2 Tsp Greek Seasoning
  • 1 Tsp Salt
  • 1/2 Tsp Pepper

Couscous Salad

  • 2 Cups Cooked Pearl Couscous
  • 1 Red Bell Pepper diced
  • 1/2 Red Onion diced
  • 1/2 Cup Crumbled Feta
  • 1/4 Cup Chopped Basil
  • 1/4 Cup Olive Oil
  • 1/4 Cup Red Wine Vinegar
  • 2 Tsp Greek Seasoning
  • 1/2 Tsp Garlic Powder
  • 1 Tsp Salt
  • 1/4 Tsp Pepper

Instructions
 

  • Preheat the oven to 450°
  • In a medium size mixing bowl add the olive oil, lemon juice, minced garlic, greek seasoning, salt, and pepper. Add the lamb chops and mix until covered in the marinade. Cover and place in the in the fridge for 5-6 hours.
  • Next chop the red bell pepper and red onion into 1/2" dices. Place onto a parchment lined baking sheet, drizzle with a little olive oil, and sprinkle with sea salt. Place in the oven for 15 minutes. Once the peppers & onions are roasted and tender place them in a large mixing bowl. Next add the cooked couscous, feta, basil, olive oil, red wine vinegar, greek seasoning, garlic powder, salt & pepper. Cover and place in the fridge.
  • After the lamb has marinaded take it out of the fridge and let it sit at room temperature for 10 minutes. Next add a drizzle of olive oil to a medium size frying pan over medium high heat. Start by placing the narrow side of the lamb chop onto the pan using tongs and cooking until the fat renders. After the fat has rendered cook around 2-3 minutes per side. Once they are cooked, serve with the couscous salad and enjoy!

Notes

If you can’t find greek seasoning I recommend making your own:
1/2 Tsp Oregano
1/4 Tsp Garlic Powder
1/4 Tsp Onion Powder
1/4 Tsp Thyme
1/4 Tsp Dill
1/4 Tsp Marjoram
