Goat Cheese & Spinach Stuffed Chicken

Is there anything better than creamy, cheesy spinach dip? The answer is yes, and it’s this stuffed chicken recipe. This recipe takes a classic spinach dip and mixes it up by adding goat cheese and stuffing it into a chicken breast to create the ultimate dinner dish. These chicken breasts are stuffed with a spinach and goat cheese mixture, wrapped in prosciutto and fried until golden brown. If you prefer a healthy option you can opt to bake the chicken rather than breading and frying and it is just as delicious!

The whole dish comes together in 30 minutes and is hearty and filling. I like to serve mine with a pasta side dish and a salad to make a complete meal. This is the perfect quick and easy weeknight dinner that your family will love!

Goat Cheese & Spinach Stuffed Chicken

Ingredients
  

  • 2 Chicken Breasts
  • 4 Pieces Prosciutto
  • 1 Cup Spinach Frozen, thawed
  • 4 Oz. Chèvre
  • 1/4 Cup Parmesan
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  • 1 Cup Panko Breadcrumbs
  • 1/2 Cup Flour
  • 1 Egg beaten
  • 1/2 Tsp Paprika
  • 1/2 Tsp Garlic Powder
  • Salt & Pepper
  • 2 Tbsp Olive Oil for frying

Instructions
 

  • Preheat the oven to 425°
  • In a small mixing bowl add the chèvre, spinach, parmesan cheese, garlic powder, onion powder, salt and pepper. Mix everything until combined.
  • Next, cut a pocket into each chicken breast about 3/4 of the way through the whole breast. Then stuff each breast with 1/2 of the spinach and cheese mixture.
  • Wrap each stuffed chicken breast in 2 pieces of prosciutto.
  • Make a dredging station with one plate of flour, one bowl with the beaten egg and a final plate with the Panko breadcrumbs, paprika, garlic powder, salt and pepper.
  • Place each chicken breast in the flour, then the egg and lastly the Panko.
  • In a medium size frying pan heat the olive oil over medium heat. Fry the chicken breasts for 2-3 min each side until golden brown. Then place the chicken breast on a baking sheet and place in the oven for 15 minutes.
  • After the 15 minutes, take out of the oven, serve with your favorite side dish and enjoy!
