Cantaloupe & Prosciutto Salad

It’s a well known fact that I am not a “fruit on salad” type of person but this salad is the exception! It is so fresh and flavorful with all the different ingredients balancing each other out. The sweet, juicy cantaloupe pairs perfectly with the salty prosciutto and peppery arugula.

The inspiration for this salad is based off of a classic Italian dish called “prosciutto e melone” that I have to order whenever I see it on a menu. It is the ideal version of a salty and sweet dish that requires no cooking, just assembling. So on top of being delicious, this has got to be one of the easiest salads I have ever made. It requires little to no prep work and comes together so quickly.

I would suggest pairing this salad with some grilled chicken, shrimp or steak to make it a complete meal, however, it is just as good on its own for a lighter meal. I am highly confident that this salad will convert other people with aversions to fruit on salad and this will become a new favorite!

Cantaloupe & Prosciutto Salad

Sweet, juicy cantaloupe is perfectly balanced out by salty prosciutto and peppery arugula. This is an easy, delicious summer salad to have as a main or side dish.

Ingredients
  

  • 3 Cups Arugula
  • 2 Cups Cantaloupe diced
  • 1/2 Cup Red Onion sliced
  • 4 oz. Prosciutto
  • 1/2 Cup Mozzerella Pearls
  • 1/4 Cup Basil chiffonaded

Honey Balsamic Dressing

  • 1/4 Cup Balsamic Vinegar
  • 1/4 Cup Olive Oil
  • 1/2 Tbsp Honey
  • 1 Tsp Dijon
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper

Instructions
 

  • Start by adding the arugula to a large salad bowl and top with the diced cantaloupe, sliced red onion, bunches of prosciutto, mozzerella and basil.
  • Next, add all dressing ingredients to a container and place the lid on it. Shake the contents vigorously for 30 seconds.
  • To serve, drizzle the prepared salad with the dressing and enjoy!
