Peaches are an iconic summer fruit known for their sweet, juicy flesh. It is my favorite time of the year when I walk into the grocery store and see cartons upon cartons of fresh peaches. They could be eaten raw, added to a salad, on top of a pizza, but my favorite way to enjoy peaches are in this honey peach crisp.
Honey acts as the main sweetener for the peach filling. While the peaches cook, they release juices creating a sweet syrup when mixed with the honey. The addition of flour helps to thicken the filling. I chose to use a gluten free flour for this recipe; however, you could use any type of flour that you have on hand.
I don’t think I am alone when I say that my favorite part of any crisp or crumble is the decadent, crispy topping. It’s crunchy, sweet and provides a beautiful contrast to the soft, tender peach filling. This recipe provides a healthy layer of this delicious topping, using coconut oil and maple syrup as a binding agent to create lumps of toasty oats and almond flour once baked.
This honey peach crisp is mouthwatering and sure to satisfy any sweet tooth craving. On top of being tasty it is also a better for you version using ingredients like coconut oil and honey rather than butter and sugar. This dessert is extremely easy to make and comes together in less than an hour. I’m confident it is sure to become your new favorite summertime dessert.
