Cranberry & White Chocolate Banana Oat Cookies

I’ve been making these cookies for years now and they continue to be one of the most delicious treats I make. On top of tasting amazing they are also so easy to make. They require little to no prep and can be made with any flavor profiles you crave. I normally make these with some dark chocolate chunks but this combination of cranberries and white chocolate is out of this world.

All that is required of preparing the dough is to mix all the ingredients in a bowl and that’s it. They are ready to eat within twenty minutes and are the perfect sweet treat. These cookies are also practically guilt free with the sweetness coming from ripe bananas and honey. I highly suggest taking the twenty some-odd minutes out of your day to whip up a batch of these, you will not be disappointed!

Ingredients:

1 Cup Mashed Banana

1 Egg

1 Tsp Vanilla Extract

1/3 Cup Honey

1 ½ Cups Oats

¼ Cup Almond Flour

¼ Tsp Pink Himalayan Sea Salt

¼ Cup Dried Cranberries

¼ Cup White Chocolate Chips (I used the brand Lily’s)

Directions:

Pre-heat the oven to 350 degrees Fahrenheit. 

While the oven is pre-heating mix all of the ingredients together until evenly combined. 

Line a baking sheet with parchment paper and use a ¼ cup measuring cup to dollop the cookie mixture onto the pan. 

The cookies don’t spread out, so they don’t have to be placed far apart. 

The mixture should give you 8 cookies if you use the ¼ cup to shape them. 

Put the baking sheet with the cookies into the oven for 20 minutes. Let them cool before enjoying and that’s it! Super simple, extremely delicious, healthy cookies.
