Shrimp Tacos With Avocado Salsa and Cilantro Lime Crema

Tacos often get a reputation for being heavy and indulgent. These shrimp tacos are just as indulgent but they feel so much lighter than an average taco with fresh, crisp, bright flavors.

The creamy avocado with the acidic, herbaceous crema provide the perfect contrast to the spicy, warm shrimp. This is the perfect spring or summer meal that is a great accompaniment to a refreshing margarita 😉 This dish doesn’t require a lot of work and is so easy to assemble, anyone at any skill level of cooking could prepare it.

Start with making the crema by mixing all ingredients into a food processor and blending until combined. Taste to see if it has enough salt for your liking and add more if needed. Then refrigerate while preparing the other components.

For the avocado salsa chop the avocado into cubes and put into a medium sized mixing bowl. Then add chopped tomato, cilantro, lime juice and salt. Set the salsa aside while working on the shrimp.

In a medium sized mixing bowl add the shrimp, 1 tbsp of avocado oil and all of the spices, salt and pepper. Mix the ingredients until the shrimp are even coated. Next place a large frying pan on the stove over medium-high heat, add the remaining tbsp of avocado oil, then add the shrimp. Cook the shrimp for 2 minutes per side. Once the shrimp are cooked transfer them to a dish.

To assemble the tacos start with a tortilla, add a spoonful of the avocado salsa, top with 3 pieces of shrimp, dollop of the crema, squeeze of lime juice and sprinkling of fresh cilantro and they are ready to enjoy.

This dish is extremely easy to make and is sure to satisfy any taco craving!
