I was inspired to make my own version of paleo granola after shelling out $10 for a pre-made bag at the grocery store. Which although delicious it seemed to me that it would be much more cost effective if I made it myself. This was by far the easiest recipe I’ve ever come up with, it couldn’t be more simple and provided me with about two and a half times more than that one $10 bag!
All you have to do is dump all the ingredients together in no particular order or fashion, mix them all together and spread on a baking sheet. All the different types of nuts and seeds create contrasting tastes and textures and really takes this granola to the next level.
You can eat this as a cereal replacement, topping of a smoothie bowl, with yogurt and berries or just by the handful. I eagerly urge you make this, you won’t regret it!
Paleo Cinnamon Vanilla Granola
Time: 45 Minutes
Ingredients:
- 1/2 Cup Chopped Walnuts
- 1/2 Cup Slivered Almonds
- 1/2 Cup Chopped Cashews
- 1/2 Cup Pecans
- 1/2 Cup Almond Flour
- 1/2 Cup Shaved Coconut
- 1/4 Cup Hemp Seeds
- 1/4 Cup Ground or Whole Flaxseed
- 2 Tbsp Sesame Seeds
- 1/2 Cup Maple Syrup
- 1 Tsp Vanilla Extract
- 2 Tsp Cinnamon
- 1/2 Tsp Sea Salt
Start by pre-heating the oven to 325 degrees.
In a large mixing bowl, mix all ingredients together until fully incorporated. Evenly disperse onto a large baking sheet.
Place into the oven for 20 minutes then take out flip the granola around and place back in the oven for another 20 minutes. The midway flip helps to ensure that the granola will become toasted and crispy.
Once the second 20 minutes is up take the granola out and cool before storing in a Tupperware container or several mason jars if you are gifting it to friends. I hope you enjoy this recipe as much as I do!
